Slice apples and remove seeds and stems accordingly.
Lay flat on a baking sheet lined with parchment paper, making sure apples are not overlapping.
Sprinkle lightly with cinnamon.
Bake in 275ºF oven for 60 minutes, then flip slices to bake on other side for another 60 minutes. If chips are still not crispy, may have to bake another 15-30 minutes.
Remove chips from over and allow to cool and crisp.
While chips are cooling, mix maple syrup, peanut butter and vanilla in a saucepan over medium heat. Whisk 1-2 minutes until sauce thickens. Remove from heat. Sauce will continue to thicken as it cools. If needed, add water 1/2 tsp at a time to thin out.
Enjoy chips and dip immediately. Optional to top with banana slices.
