Avocado Hollandaise Sauce

Ingredients

  • 1/2 ripe avocado chopped
  • 2 tsp lemon juice
  • 1/2 tsp nutritional yeast optional
  • 1 TB dry white wine
  • 1 TB EVOO 
  • Cayenne pepper optional

Instructions

  • Place avocado, lemon juice, and nutritional yeast into a blender or food processor. Blend until smooth.
  • Add wine and olive oil 1/2 TB at a time and pulse until well blended.
  • Serve on Eggs Benedict, salmon, or veggies. Optional to add a sprinkle of cayenne pepper for added spice.
