Apple Chip Nachos with Peanut Butter Caramel Sauce

The other day I posted a Super Bowl Round-up of snack swaps, and while those salty, spicy, and savory tastebuds were satisfied, sweet was definitely lacking.  As someone with a sweet tooth, I felt this area needs to be fairly represented at any event.  And therein lies the inspiration for my latest recipe: Apple Chip Nachos with Peanut Butter Caramel Sauce.

In this play on traditional apples with peanut butter snack, I decided to take it to chip form.  I’ve recently been playing with making my own potato and sweet potato chips, so why not apple?  I love dried fruit for a quick snack, so decided to play with my food and change it up to a nacho version.  I knew peanut butter would have to be involved, but wanted to make sure it was able to be drizzled and dipped, so when I came across this Peanut Butter Caramel Sauce from The Vegan 8, I knew I had a winner!  For added “nacho” effect, I topped the chips with sliced bananas in place of traditional jalapeños.

Unlike traditional nachos made with tortilla chips and drizzled with cheese, this apple version brings fiber, vitamin C, and potassium to the party.  Throw in a little protein from the peanut butter in the sauce, and you have a complete snack.  Now we have a party!

Apple chips are easy to make, however they can be a little time consuming, as I learned during this process. So if you plan to make your own apple chips, make sure to a lot at least 2.5 hours to DIY.  And if time isn’t in your favor?  You can cheat by using Bare Apple Chips.  Simply leave the skin on the apples and slice either across or lengthwise- I do half and half for dramatic effect.  I use a good ol’ fashioned chef knife to slice the apples, since I am permanently scarred from using a mandolin, but that is an option as well.  Remove any seeds and stems, then layer on a baking sheet lined with parchment paper, making sure no apples are touching one another to ensure full exposure to heat.  Bake and allow to cool once complete.

During the cooling process, create the sauce and drizzle on top.  Sauce thickness can vary, so if it needs to be thinned, add a little water.  Sauce will also continue to thicken the longer it sits out, so if you plan on these chips being out for awhile at an event like a Super Bowl party, I’d suggest err on the thinner side to start.

Apple Chip Nachos with Peanut Butter Caramel Sauce

Ingredients

  • 2 apples
  • Cinnamon
  • 1/2 C maple syrup
  • 1/4 C natural creamy peanut butter or any nut or seed butter
  • 1/2 tsp vanilla extract
  • 1/2 banana sliced (optional)

Instructions

  • Slice apples and remove seeds and stems accordingly.
  • Lay flat on a baking sheet lined with parchment paper, making sure apples are not overlapping.
  • Sprinkle lightly with cinnamon.
  • Bake in 275ºF oven for 60 minutes, then flip slices to bake on other side for another 60 minutes. If chips are still not crispy, may have to bake another 15-30 minutes.
  • Remove chips from over and allow to cool and crisp.
  • While chips are cooling, mix maple syrup, peanut butter and vanilla in a saucepan over medium heat. Whisk 1-2 minutes until sauce thickens. Remove from heat. Sauce will continue to thicken as it cools. If needed, add water 1/2 tsp at a time to thin out.
  • Enjoy chips and dip immediately. Optional to top with banana slices.

Notes

If will eat sauce later, will need to add a few spoonfuls of water and reheat to thin it. Add more water till reach desired consistency.
If leftover peanut butter caramel sauce should exist, can use on pancakes, waffles, or as spread on toast or english muffins.
