Eggnog Waffles with Maple Bourbon Syrup (Holiday Breakfast)
These Eggnog Waffles with Maple Bourbon Syrup are the perfect way to wake up on a holiday morning. Enjoy breakfast in bed or after a morning of opening gifts. And a great way to use up leftover eggnog.
Every year around Christmas, Taco asks me to buy eggnog so we can enjoy some at home. And every year, I buy a container, we have 1 glass each, and are good to go for the rest of the holiday season. Which means I often wind up with leftover eggnog sitting in my fridge because no one wants anymore. Which is why this year I said nuh-uh, no way am I throwing out another container of eggnog. And so the Eggnog Waffles with Maple Bourbon Syrup were born.
Eggnog Waffles with Maple Bourbon Syrup
This recipe can not be quicker to whip up with just a few simple ready-to-go ingredients at home. Start with your favorite waffle mix (or if you have a from scratch recipe you love, go for it!). Simply swap out the milk in the basic recipe for premade eggnog and add in some ground cinnamon, and you have Eggnog Waffles.
Now what eggnog would be complete without a little bourbon? That’s where the Maple Bourbon Syrup comes in. Taco and I are definitely Syrup Snobs and it’s pretty much real deal maple or nothing in our house. No syrupy sugar water here! Simply mix a little (and trust me, a little goes a LONG way!) bourbon into warm maple syrup and top your eggnog waffles with maple bourbon syrup.
The Right Tools: Double Waffle Maker
If you’re going to be making waffles for 2, then I highly recommend investing in a Double Waffle Maker. Each waffle can take a few minutes to cook, and there’s nothing less fun than having a make one waffle at a time while one gets cold and one person gets cranky waiting. So do yourself and a relationship a favor – invest in a double waffle maker.
Before you get cooking, make sure you spray on (or use a silicone brush) a light, neutral oil like grapeseed oil. Grapeseed oil also has a high smoke point so it can hold up in high heat. Using an oil that has a dominant flavor, like olive oil, may overpower the delicate flavor of your waffle. And you definitely want to make sure you get to taste a little eggnog in your waffle.

Eggnog Waffles with Maple Bourbon Syrup
Ingredients
For the Waffles:
- 2 eggs
- 3 C pre-made eggnog
- 8 TB butter melted
- ¼- ½ tsp ground cinnamon
- 1 package Wildtree Buttermilk Pancake & Waffle Mix or 3C equivalent waffle mix
- Natural Grapeseed Oil to spray waffle iron
For the Bourbon Maple Syrup:
- ¾ C pure maple syrup
- ½ TB bourbon can add more depending on preference
Instructions
- Preheat Belgian waffle maker on medium setting.
- In a large bowl, beat the eggs, eggnog, and butter together.
- Add the waffle mix and stir to combine.
- Lightly spray the waffle iron with grapeseed oil to prevent sticking. Fill the iron with approximately 1/3 C butter (or refer to your waffle iron’s instructions for recommended fill amount). Cook until timer on waffle iron indicates they are done.
- Continue with remaining batter.
