Egg-cellent Uses for Leftover Easter Eggs
Happy Day After Easter to all my happy couples out there! If you took part in the tradition of dyeing Easter eggs, chances are you may have a lot of leftover eggs around (especially if you had a lot of ambitious little helpers with your dyeing). Now that the bunny has come and gone, it’s time to put those leftover hardboiled eggs to use.
Eggs are nutrient powerhouses underneath those shells. One large egg contains approximately 72 calories and 6 grams of protein. They are one of the few natural food sources of bone-healthy vitamin D, found only in the yolk of the eggs, and phosphorus. They are also a rich source of vitamin B12 to help form healthy cells in our body. That hearty source of protein also slows down our digestive process, which helps keep us feeling fuller longer- and may even curb those cravings to snack on leftover chocolate eggs.

Add some slices of hardboiled eggs into your next salad for added protein.
Make a lower-calorie egg salad by using an olive-oil based mayo OR swap out the mayo for plain hummus or avocado instead. Sprinkle in some fresh dill and paprika for added color and flavor- if you like it spicy, add some cayenne pepper. Enjoy as a sandwich, wrap up in a piece of bib lettuce or a collard leaf, or scoop into a hollowed-out tomato. Also makes a great spread to enjoy with fresh cut veggies!
Salad Niçoise is not your typical “girly” salad- make this hearty salad for your next lunch date with your man and you’ll both be satisfied till dinnertime.
Pack potato salad full of protein by adding chopped hardboiled egg into the mix. Opt for a vinegar or skyr yogurt-based dressing versus mayo to cut down on fat and calories.
Deviled eggs are not just for summer BBQs. Serve as an appetizer or as a side dish at your next meal or party. This low-cal version of the original relies on spice and low-fat alternatives for flavor instead of adding fat from mayo.
