Recipe: Very Berry Tiny Trifles
When we go out to dinner, Mr E makes it known ahead of time if dessert will be happening. I like this because I can plan my meal accordingly (Split an appetizer? Skip the appetizer? Salad-tizer? Lighter entree?). We very rarely have dessert at home when it’s just the two of us. But having company over is a different story. Rather than making a huge cake or pie that everyone is too full to eat (and stuck with a TON of leftovers!), I’ve been totally jamming on making mini desserts. So when The Recipe Redux announced this month’s theme would be mini morsel desserts, I was thrilled to share one of my small treats.
I love mini sweet anything. Mini pastries (I’m looking at you, tiny cannoli!). Cookies. Dove dark chocolate squares. Petit fours at afternoon tea. It’s not only for the cuteness factor, but also portion control. I’m usually pretty content with a small bite of sweet. Anything more than that and I want to overindulge till my tummy hurts.

For your next get together or sweet tooth attack, try out these Very Berry Tiny Trifles. This layered dessert is the perfect portion and mix of fruit, fresh cream, and cake. Lady fingers and fresh berries are layered between fresh berry whipped cream in shooter glasses. I added a sprinkle of graham cracker crumbs for added crunch.
If you’ve never made fresh whipped cream, it’s super simple. The key is place your metal bowl and beaters in the freezer anywhere from 15 minutes to overnight so there’s a chill. It definitely helps create a stiff consistency cream. Fresh raspberries were puréed and folded into the cream for color and sweetness (no added sugars here). Fresh lady fingers make up the cake layer. HACK ALERT: if you’re in a pinch and no lady fingers available, cut up pancakes will also do the trick!

Impress your guests by serving these in 2 ounce shooter glasses with espresso spoons (cute tiny spoons). You can get fancy and use glass versions. Or I recently saw plastic ones at my local dollar store with small plastic spoons to go along.
Serve these up at your next event for the right amount of sweet. In honor of July 4th coming up, consider alternating fresh blueberries with the raspberry layers for a patriotic punch of color! And savor this mini dessert- it’s the right amount of sweetness and indulgence to make you feel satisfied.

Very Berry Tiny Triffles
- 1/2 C heavy or whipping cream
- 6 oz container of raspberries (divided)
- 9 lady fingers (split in half)
- 1 graham cracker sheet (crushed)
- Puree 1/4 C raspberries and set aside
- Whip cream in chilled bowl (see Notes) until stiff peaks form
- Fold in pureed raspberry until well blended
- To layer, place half of a lady finger at the bottom of the shooter glass. Top with a small spoonful of berry whipped cream, 2-3 raspberries, and a sprinkle of graham cracker crumbs. Place a lady finger half on top and continue layering with cream and berries.
Chill a metal bowl plus metal beaters from mixer in a freezer 15 minutes up to overnight before beating cream to help with whipping process.
